Sweet Potato Brownies

- Unlike an ordinary potato, a sweet potato is a nutrition powerhouse. You can get your recommended daily amount of vitamin A from eating 2 brownie slices! Vitamin A is essential for eyesight, immune function and healthy skin. Try and steam the potatoes instead of boiling so that more of the vitamins are retained. Who’d of thought this sweet treat could be one of your 5 a day!

- These brownies are packed full of protein with around 6.5g per brownie. Eating one of these brownies will help promote healthy growth and repair in the body.

- If you don’t already know about the wonderful world of cacao, let me introduce you. Everything you know as chocolate comes from the cacao tree, which produces cacao beans, these can be chopped into nibs, powdered or made into cacao butter. If the cacao bean is heated to a high temperature, then cocoa is produced which has a sweeter flavor. Cacao is rich in antioxidants, magnesium, iron, potassium and a bunch of other goodies. It’s a little pricey but a good investment!



- 2 medium sweet potato (400-500g)
- 12 pitted dates
- 100g ground almonds
- 6 tbsp maple syrup
- 6 tbsp raw cacao powder
- 100g oats
- 2 tbsp melted coconut oil
- For extra crunch, add a handful of a nut of your choice, I went with peanuts!



1. Preheat oven to 180C (Fan)
2. Peel and cut the sweet potato into cubes. Steam until its nice and soft
3. Put the sweet potato in a food processor/strong blender, and add the rest of the ingredients (oats, dates, ground almonds, cacao powder, maple syrup, melted coconut oil, nuts) then BLEND!
4. It should make a thick paste, if your mixture seems too thick to spread add a tablespoon of water and blend again until smoother. Spread into a lined baking tray and bake for 40-45 minutes or until you can stick a knife in the brownie and bring it out dry
5. Allow them to cool for a while so that they stick together and then enjoy!
