Mushroom and Pak Choi Ramen

-       Pak choi is full of vitamin C which is important in collagen formation. Collagen provides firmness and elasticity to skin. So, start adding pak choi to your diet and watch the clocks rewind

-       Mushrooms are one of the only non-animal sources of vitamin D. Vitamin D helps regulate the amount of calcium and phosphate in the body. These nutrients are needed to keep bones, teeth and muscles healthy.



-       1 liter water

-       1 vegetable stock cube

-       200ml soy sauce

-       ½ tbsp ginger

-       ½ tbsp garlic

-       ½ tbsp mustard seeds

-       ½ tbsp sugar

-       Pinch of salt and pepper

-       2 tbsp rice wine vinegar

-       2/3 tbsp miso paste

-       2 nests of noodles

-       3 handfuls of mushrooms

-       1 pak choi



  1. Boil water, dissolve stock cubes, add soy sauce, ginger, garlic, mustard seeds, sugar, salt, pepper, rice wine vinegar, miso and then heat in a wok
  2. Peel and chop mushrooms, chop pak choi and add to wok
  3. Add the noodles and cook until soft
  4. Remove from wok and enjoy, garnish with chilli to taste
